Cilantro Chicken Avocado Dip | Allergen Free Recipe

One of our goto favorite transportable lunches is anything we can put this delicious chicken avocado on.  We usually keep it wheat free as well, but feel free to put this on a sandwich with slice of tomato (maybe some bacon), who knows.   This lunch packs well and is a nice filling meal for that isolated hiking spot in the woods.  

Recipe is relatively subjective to your tastes, but starts with a couple of grilled chicken breasts.  A couple of avocados, two limes, approximately a 1/3 cup of chopped cilantro.  (You can use parsley here if you aren’t a cilantro fan)

Dice up the chicken into relatively small chunks

Scoop the Avocado and smash it all into the chicken pieces.   Squeeze in the juices of two limes.

Mix in the cilantro, some salt and pepper, and spread until thoroughly mixed

We usually have carrot sticks with it or you can have corn tortillas etc.  Primarily we eat it like a guacamole type dip on ends of our carrot sticks, but use your imagination!  Make some of this and let us know how you incorporated it into your lunches.  

PS.  the Lime juice keeps the avocado from turning brown, so it lasts until lunch time quite easily.Rockslide
