One of our goto favorite transportable lunches is anything we can put this delicious chicken avocado on. We usually keep it wheat free as well, but feel free to put this on a sandwich with slice of tomato (maybe some bacon), who knows. This lunch packs well and is a nice filling meal for that isolated hiking spot in the woods.
Recipe is relatively subjective to your tastes, but starts with a couple of grilled chicken breasts. A couple of avocados, two limes, approximately a 1/3 cup of chopped cilantro. (You can use parsley here if you aren’t a cilantro fan)
PS. the Lime juice keeps the avocado from turning brown, so it lasts until lunch time quite easily.
