WARNING: This is amazing and you will have the hardest time not making this all the time. Don’t blame us for your new addiction.
The first step is to add strawberries, blueberries, sugar, balsamic vinegar and cayenne to a pan and heat them over medium heat.
Bring it to a boil and mash the berries a little
Remove the berries from heat and strain the excess juices. Set the berries aside in the fridge to allow them to cool for at least an hour.
Next step for us is to slice the freshly baked bread. 🙂

Spread the dairy free butter evenly on outsides of all the slices of bread that you will be grilling. (of course you can use real butter if you aren’t dairy-allergic)
We recently found two types of dairy-free cheese that work pretty well. The first is So Delicious Coconut Milk based Mozzarella and also Daiya Mozzarella. (Personal preference is the So Delicous because it just has less ingredients than the Daiya, but it isn’t as readily available yet) .
After the layer of cheese put the raw baby spinach leaves on top of the cheese and spoon on the mixed berry reduction. Salt and pepper to taste.
Then lump on some more dairy-free cheese! (It is a grilled cheese after all, not a grilled berry sandwich)
The Daiya takes a little longer to melt than a traditional dairy cheese so just manage the heat so as to not burn the bread while you grill. For an added effect, you can brand your grilled cheese. 🙂

- Spread butter on outsides of the bread that you will be grilling
- Add cheese, berries, spinach, salt and pepper
- Grill both sides and ENJOY!
